Equipment

  • Large rimmed baking sheet

Ingredients

  • 1 ¼ pounds cauliflower cut into florets
  • ¼ cup extra-virgin olive oil plus more as needed
  • 1 teaspoon cumin seeds
  • ½ teaspoon kosher salt plus more as needed
  • ¼ teaspoon freshly ground black pepper plus more as needed
  • 1 pound Italian sausages pricked with a fork
  • cup plain yogurt preferably non-Greek, whole milk
  • 1 small garlic clove
  • Turkish or Aleppo pepper as needed
  • Fresh herbs parsley, dill, or mint, for garnish (optional)
  • Toasted pine nuts for serving (optional)

Instructions

  • Preheat the Oven: Set your oven to 425°F.
  • Prepare the Cauliflower: Arrange the cauliflower florets on a large, rimmed baking sheet. Drizzle with olive oil, then sprinkle with cumin seeds, salt, and pepper. Toss everything together to evenly coat the florets. Roast in the oven for 10 minutes.
  • Add the Sausages: Lightly brush the sausages with olive oil and place them on a separate baking sheet. Add the sausages to the oven alongside the cauliflower. Continue roasting for about 25 minutes, flipping the sausages halfway through, until they are golden and fully cooked and the cauliflower is tender with caramelized edges.
  • Prepare the Yogurt Sauce: While the sausages and cauliflower are cooking, make the yogurt sauce. In a small bowl, combine the plain yogurt with the grated garlic clove. Season with a pinch of salt and pepper, stirring until smooth and well mixed.
  • Assemble the Dish: Arrange the roasted sausages and cauliflower on a serving platter or divide among individual plates. Drizzle the yogurt sauce over the top and sprinkle with Turkish or Aleppo pepper, fresh herbs (if using), and pine nuts for extra flavor and texture.

Notes

  • For a runnier yogurt sauce, thin Greek yogurt with a splash of milk or water.
  • Garnishing with fresh herbs adds color and enhances the flavors of the dish.
  • Pine nuts are optional but provide a delightful crunch and nutty flavor to the dish.
