Equipment

  • Air fryer (standard size)
  • Silicone muffin molds or ramekins

Ingredients
  

  • 4 large eggs
  • 4 slices bacon sugar-free, uncured
  • ¼ cup shredded hard cheese Parmesan or aged cheddar, allowed in a flexible carnivore diet
  • 1 tbsp tallow or clarified butter for greasing
  • Salt to taste

Instructions
 

  • Preheat the air fryer to 350°F.
  • Cook the bacon: Place the bacon in the air fryer and cook for 6-8 minutes until crispy. Remove and chop into small pieces.
  • Prepare the egg mixture: In a bowl, whisk the eggs with a pinch of salt.
  • Grease the muffin molds: Lightly grease silicone muffin molds or ramekins with tallow or clarified butter.
  • Assemble the egg bites: Divide the chopped bacon evenly between the molds. Pour the egg mixture over the bacon. If following a flexible carnivore diet, sprinkle a small amount of cheese into each mold.
  • Cook the egg bites: Place the muffin molds in the air fryer and cook for 8-10 minutes, or until the eggs are set and cooked through.
  • Serve: Carefully remove the egg bites from the molds and serve hot.

Notes

Variations (Flexible Carnivore Diet):

  • Extra Cheesy Bites: Add extra cheese to the egg mixture for a cheesier bite.
  • Spicy Egg Bites: Add a pinch of cayenne pepper or chili flakes for a spicy kick.
