In a blender, combine the pineapple chunks, grated ginger, honey or agave syrup, and water. Blend until smooth.
Strain the mixture through a fine-mesh sieve into a pitcher to remove any pulp or ginger pieces.
Fill two glasses with ice.
Pour the pineapple-ginger mixture evenly between the two glasses, filling each about 1/3 of the way.
Top off each glass with ginger beer.
Stir gently to combine.
Garnish with fresh mint leaves and pineapple wedges.

For a sweeter mocktail, add more honey or agave syrup to taste.
