- 1/3 cup creamy peanut butter
- 1/2 cup coconut sugar
- 1 tsp vanilla extract
- 1/6 tsp sea salt
- 1 1/2 cups rolled oats
- 1 tsp baking powder
- 1/4 cup chocolate chips
- 1/2 to 1 tbsp milk of choice only if needed

Preheat the oven to 400°F and line a baking sheet with parchment paper.
In a large bowl, mix the egg, peanut butter, coconut sugar, vanilla, and salt. Stir well for 1–2 minutes until the mixture is smooth.
Add oats and baking powder. Use a spatula to mix until everything is evenly combined.
If the dough feels dry or too thick, add 1/2 to 1 tablespoon of milk and stir until slightly loosened.
Fold in the chocolate chips until distributed throughout the dough.
Chill the dough in the refrigerator for 10 minutes to firm up.
Scoop and shape the dough into 10 even cookies. Place on the prepared baking sheet with space between each.
Bake for 10 to 14 minutes (13 minutes is ideal for soft centers).
