Prepare the Cake Layers:
Preheat your oven to 350°F. Line the bottoms of three 8-inch round cake pans with parchment paper and lightly coat them with nonstick cooking spray.
Using a stand mixer with a whisk attachment, mix the butter and vegetable oil on low speed until combined. Gradually increase to medium-high speed and continue mixing until the mixture is smooth, about 2 minutes.
Slowly add the granulated sugar while the mixer is running, continuing to beat until the mixture is light, fluffy, and pale yellow, about 2 minutes.
Add eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
In a separate bowl, whisk together flour, baking powder, and salt.
With the mixer on low speed, alternate adding the dry ingredients and buttermilk in three additions, starting and ending with the dry ingredients. Mix until just combined; avoid overmixing.
Use a 1-cup measure to portion 1 cup of batter into each prepared cake pan. Spread the batter evenly to the edges using a spatula. The layers will be thin.

Assemble the Cake:

Repeat this process, stacking the cake layers and spreading icing between each one. Ensure the icing is spread evenly to the edges.
For the final layer, pour the remaining icing over the top and use an offset spatula to spread it evenly, allowing it to drip down the sides.
Let the cake set for about one hour before carefully transferring it to a serving plate.
