Instructions
Preheat and Prepare: Preheat your oven to 375°F. Lightly grease the bottom and sides of a 9-inch cast-iron skillet with nonstick cooking spray.
Prepare the Berry Mixture: In a large mixing bowl, combine the mixed berries, granulated sugar, flour, lemon juice, and a pinch of salt. Toss gently until the berries are evenly coated. Transfer this mixture into the prepared skillet.
Make the Crisp Topping: In the same mixing bowl (no need to clean it), combine the flour, oats, granulated sugar, brown sugar, cinnamon, and salt. Drizzle in the melted butter, stirring until the mixture forms a crumbly texture. Use your hands to create small clusters for added texture. Sprinkle this topping evenly over the berry mixture in the skillet.
Bake: Cover the skillet loosely with aluminum foil and bake for 15 minutes. After 15 minutes, remove the foil and continue baking for another 25 to 30 minutes, until the topping is golden brown and the berry filling is bubbling around the edges.
Cool and Serve: Remove the skillet from the oven and let it cool slightly. Serve warm with scoops of vanilla ice cream, if desired.
Notes
Berry Options: Feel free to mix and match your favorite berries or use whatever is in season. Frozen berries work perfectly, though they may release more juice. No Skillet? No Problem: If you don’t have a cast-iron skillet, you can use any medium baking dish (like a 9 × 9-inch square pan or an 8 × 12-inch oval pan) without changing the bake time.Texture Tips: For a crispier topping, use your hands to create clusters from the crumb mixture before spreading it on the berries.
