Ingredients
  

  • - Large-sized eggs – 6
  • - Whole milk – ¼ cup 60 ml
  • - Italian seasoning – 1 tsp
  • - Salt and ground black pepper – to taste
  • - Unsalted butter – 1 tbsp
  • - Fresh mushrooms – 3 chopped
  • - Ripe olives – 2 tbsp 20 g, pitted and chopped
  • - Scallion – 1 chopped
  • - Garlic cloves – 2 minced
  • - Canned tuna – ¼ cup 145 g, drained and flaked
  • - Mozzarella cheese – 1 cup 115 g, shredded

Instructions
 

  • In a mixing bowl, whisk together the eggs, milk, Italian seasoning, salt, and pepper until well combined. Set aside.
  • Heat the butter in a large wok or skillet over medium heat.
  • Add the mushrooms, olives, scallion, and garlic to the skillet and sauté for 4-5 minutes, stirring frequently, until softened.
  • Pour the egg mixture evenly over the vegetables in the skillet.
  • Cook for 4-5 minutes, tilting the pan and letting any uncooked egg flow underneath for even cooking.
  • Sprinkle the top of the omelet with tuna and shredded mozzarella cheese, then cover the skillet with a lid.
  • Remove the skillet from heat and let it sit covered for 1-2 minutes to melt the cheese and set the omelet.
  • Cut into portions and serve warm.

Notes

- For added Mediterranean flair, garnish with fresh parsley or a sprinkle of paprika.
- Pair with a light side salad or whole-grain toast for a complete meal.
- Adjust the seasoning based on your taste preferences.
