Ingredients
  

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons ground sumac
  • ½ teaspoon kosher salt
  • 2 hothouse or English cucumbers diced
  • ¼ cup crumbled feta cheese
  • 1 tablespoon fresh mint chopped
  • 1 tablespoon fresh parsley chopped
  • teaspoon red pepper flakes

Instructions
 

  • In a large mixing bowl, combine the olive oil, lemon juice, sumac, and salt, whisking until well blended.
  • Add the diced cucumbers and crumbled feta cheese, tossing gently to coat everything evenly.
  • Transfer the mixture to a serving dish and top with fresh mint, parsley, and a sprinkle of red pepper flakes for a touch of heat.

Notes

  • If sumac is unavailable, lemon zest or orange zest can be a great substitute for a citrusy tang.
  • To reduce sodium, opt for a lower-sodium feta or reduce the added salt.
