Equipment

  • 4-quart or larger air fryer

Ingredients
  

  • 1/2 lb beef kidneys cleaned and cut into bite-sized pieces
  • 2 tbsp tallow or clarified butter for greasing
  • 1/4 tsp salt

Instructions
 

  • Clean the kidneys: Rinse well, remove any fat or connective tissue, and cut into bite-sized pieces.
  • (Optional) Marinate the kidneys: In a bowl, mix apple cider vinegar, minced garlic, and salt. Coat the kidney pieces, cover, and let marinate for 30 minutes. Skip this step for strict carnivore.
  • Preheat the air fryer to 400°F.
  • Prepare the kidneys: Pat dry (if marinated). Season with salt if not already done.
  • Grease the air fryer basket with tallow or clarified butter.
  • Cook the kidneys: Place in a single layer in the basket. Air fry for 8–10 minutes, shaking halfway through, until browned and slightly crispy.
  • Serve: Let cool briefly before serving hot.
