Instructions
Clean the kidneys: Rinse well, remove any fat or connective tissue, and cut into bite-sized pieces.
(Optional) Marinate the kidneys: In a bowl, mix apple cider vinegar, minced garlic, and salt. Coat the kidney pieces, cover, and let marinate for 30 minutes. Skip this step for strict carnivore.
Preheat the air fryer to 400°F.
Prepare the kidneys: Pat dry (if marinated). Season with salt if not already done.
Grease the air fryer basket with tallow or clarified butter.
Cook the kidneys: Place in a single layer in the basket. Air fry for 8–10 minutes, shaking halfway through, until browned and slightly crispy.
Serve: Let cool briefly before serving hot.
