Keto Stuffed Salmon Recipe

This rich and flavorful stuffed salmon is the perfect keto-friendly dish, packed with creamy cheese, fresh spinach, and savory seasonings.

Ingredients
  

  • 4 salmon filets
  • 4 oz cream cheese
  • 1 cup fresh spinach chopped
  • ½ cup parmesan cheese
  • ¼ cup shredded mozzarella cheese
  • 2 tsp minced garlic
  • Paprika to taste
  • Salt & pepper to taste
  • Olive oil & butter

Instructions
 

  • Prepare the salmon: Pat the salmon filets dry and carefully cut a slit into the middle of each, stopping just before slicing all the way through.
  • Season: Drizzle the salmon with olive oil, then sprinkle with salt, pepper, and paprika for extra flavor.
  • Make the filling: In a bowl, mix the cream cheese, chopped spinach, parmesan, mozzarella, and minced garlic until well combined.
  • Stuff the salmon: Evenly divide the filling and spoon it into each salmon filet, gently pressing it in.
  • Cook: Heat a pan over medium-high heat and melt some butter. Once hot, place the stuffed salmon filets in the pan.
  • Sear: Cook for about 6 minutes on each side, or until the salmon is fully cooked and golden brown.
  • Serve: Remove from heat, let it rest for a minute, and enjoy your keto-friendly stuffed salmon!

Notes

  • The amount of olive oil and butter needed depends on the fat content of your salmon. Farm-raised salmon typically requires less than wild-caught sockeye.
  • For an even crispier finish, sear the salmon in the pan, then transfer it to a preheated oven at 375°F for an additional 5-7 minutes.
