Brown the Italian sausage in a pan over medium heat, ensuring it’s fully cooked. Stir in the cream cheese, 1/2 cup of the shredded Mexican cheese, and your preferred seasonings until the mixture is smooth and well combined.
Slice off the tops of the bell peppers and remove the seeds and inner membranes, creating a hollow space for the filling.
