Ingredients

  • 1 medium head of cabbage chopped
  • 1.5 lbs smoked sausage sliced
  • 1.5 cups heavy cream
  • 6 oz cream cheese softened
  • 3/4 cup butter
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp minced garlic
  • 1 tsp onion powder
  • Salt & pepper to taste

Instructions

  • Prepare the base: In a baking dish, combine the cabbage, heavy cream, cream cheese, butter, garlic, onion powder, salt, and pepper. Stir well to evenly distribute the ingredients.
  • Initial baking: Cover the dish and bake at 400°F for 30 minutes, allowing the cabbage to soften and the flavors to meld.
  • Cook the sausage: While the cabbage bakes, brown the sliced smoked sausage in a skillet over medium heat, then set aside.
  • Final bake: Remove the dish from the oven, stir in the browned sausage, and sprinkle Parmesan cheese over the top. Return to the oven for another 5-10 minutes, uncovered, until the cheese melts and forms a light crust.
  • Cool and serve: Take the dish out, let it cool slightly, and enjoy this creamy, cheesy keto casserole!

Notes

  • This recipe works best when baked in a cast iron skillet for even heat distribution.
  • For added texture, sprinkle crushed pork rinds on top before the final bake.
  • Try swapping smoked sausage for grilled chicken or bacon for variation.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
