This keto-friendly pistachio-crusted salmon is packed with flavor and healthy fats, making it a perfect low-carb meal.
The Dijon mustard and sugar-free maple syrup create a tangy-sweet base, while crushed pistachios add a delicious crunchy coating.

Ingredients
  

  • 16 oz salmon
  • 1/3 cup pistachios
  • 3 tbsp ground Dijon mustard
  • 1–2 tbsp sugar-free maple syrup
  • Salt & pepper

Instructions
 

Prepare the Oven & Baking Sheet

  • Preheat the oven to 400°F.
  • Line a baking sheet with foil for easy cleanup.

Chop the Pistachios

  • Finely chop the pistachios and place them in a shallow dish.

Make the Dijon Coating

  • In a small bowl, mix the Dijon mustard, sugar-free maple syrup, salt, and pepper until smooth.

Coat the Salmon

  • Spread the mustard mixture evenly over the salmon.
  • Press the salmon into the chopped pistachios, ensuring all sides are coated.

Bake & Serve

  • Place the coated salmon on the prepared baking sheet.
  • Bake for 12 minutes or until the salmon is cooked through and flakes easily with a fork.
  • Let cool slightly before serving.

Notes

  • To enhance the crunch, toast the chopped pistachios before coating the salmon.
  • Serve with a side of roasted vegetables or a fresh green salad for a complete keto meal.
  • Adjust the sweetness by adding more or less sugar-free maple syrup based on your preference.
