These keto peanut butter and jelly cookies are a delicious low-carb twist on the classic treat.
With a soft peanut butter base and a sweet strawberry jam center, they make a perfect guilt-free dessert or snack.

Ingredients
  

  • 1 cup peanut butter
  • 1 large egg
  • 1/3 cup powdered sweetener
  • 1/4 cup strawberry jam

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the peanut butter, egg, and powdered sweetener, stirring until the dough is smooth and well blended.
  • Divide the dough into 10 equal portions, rolling each one into a ball, and place them on the prepared baking sheet.
  • Press each ball gently with your hand to flatten slightly, then use the back of a spoon or your thumb to create a small indentation in the center.
  • Spoon about 1 teaspoon of strawberry jam into each indentation.
  • Bake for approximately 15 minutes or until the cookies turn golden brown.
  • Remove from the oven, let them cool completely, and enjoy!

Notes

  • For a different flavor, swap the strawberry jam for raspberry or blackberry jam.
  • Ensure the peanut butter is sugar-free and keto-friendly for the best results.
  • Store cookies in an airtight container at room temperature for up to five days.
