  • 2 cups almond flour
  • 1 large egg
  • ½ cup confectioners sweetener

  • ¼ cup confectioners sweetener
  • Juice of ½ lemon
  • ½ tablespoon heavy cream

Instructions
 

  • In a bowl, whisk together the almond flour, sweetener, and baking powder to evenly distribute the dry ingredients.
  • In a separate bowl, beat the egg, softened butter, vanilla extract, and lemon juice until smooth. Slowly incorporate the wet ingredients into the dry mixture, stirring until a dough forms. Cover and refrigerate for 30 minutes to firm up.
  • Preheat your oven to 300°F and line a baking sheet with parchment paper.
  • Using a spoon, scoop out portions of the dough and shape them into tablespoon-sized balls, placing them on the prepared baking sheet.
  • Gently press each cookie to flatten slightly, then bake for 15-18 minutes or until lightly golden. Allow them to cool before serving.

Frosting Instructions (Optional)

  • For a sweet citrus glaze, whisk together the confectioners sweetener, lemon juice, and heavy cream until thickened. Drizzle over the cooled cookies and let set before enjoying.
