These refreshing keto-friendly jello shots combine tequila, fresh watermelon juice, and a hint of lime for a fun, low-carb treat. With a touch of allulose for sweetness and a chamoy-tajin rim, these shots deliver bold flavor while keeping carbs minimal.

Ingredients
  

  • 1/2 cup tequila
  • 1 tbsp unflavored gelatin
  • 1/4 cup cold water
  • 1/2 cup boiling water
  • 1 tbsp allulose
  • 1/3 cup fresh watermelon juice
  • 1 lime juiced
  • Chamoy
  • Tajín

Instructions
 

  • In a bowl, combine the unflavored gelatin with cold water, stirring well to avoid clumps. Let it sit for about 2 minutes to bloom.
  • Pour in the boiling water and mix until the gelatin fully dissolves. Stir in allulose until well combined.
  • Add the tequila, fresh lime juice, and watermelon juice, mixing everything thoroughly.
  • Take 12 shot containers, dip their rims in chamoy, and then coat with tajín for a zesty kick. Arrange them on a tray for easy handling.
  • Evenly distribute the mixture into the shot containers and place them in the refrigerator for at least 1 hour or until they set completely.

Notes

  • For a stronger kick, increase the tequila slightly, but be mindful that too much alcohol may prevent the jello from setting properly.
  • Swap watermelon juice with another keto-friendly fruit juice like strawberry puree for a different flavor profile.
  • If you prefer a sweeter taste, adjust the amount of allulose to suit your preference.
  • Store in the fridge until ready to serve to maintain the perfect consistency.
