Ingredients
  

  • 1 tablespoon extra virgin olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 pinch red pepper flakes
  • 1 pound lean ground beef
  • 2 tablespoons tomato paste
  • 1 teaspoon oregano
  • 28 oz can crushed tomatoes
  • 1 cauliflower cut into florets
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese shredded
  • ½ cup Parmesan cheese shredded
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Blanch the cauliflower in boiling water for 3 minutes, then drain.
  • In a skillet, heat olive oil over medium heat and cook the onion until softened. Add garlic and red pepper flakes, cooking for an additional minute.
  • Add the ground beef, seasoning with salt and pepper, and cook until browned.
  • Stir in tomato paste and oregano, cook for 2 minutes, then add crushed tomatoes and simmer for 15 minutes.
  • Combine the meat sauce with the blanched cauliflower, mixing well.
  • In a 9x13 baking dish, layer half the cauliflower mixture, top with half of each cheese, then repeat the layers.
  • Bake for 25 minutes or until the cheese is golden and bubbly.
