Ingredients
  

  • 1.5 lbs cauliflower florets
  • 1/2 cup shredded mozzarella
  • 1 egg beaten
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Toppings of your choice

Instructions
 

  • Preheat & Prep the Cauliflower: Set your oven to 400°F. Process the cauliflower florets in a food processor or blender until they reach a fine, rice-like consistency.
  • Cook the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl and heat for 4-5 minutes to soften it.
  • Drain Excess Moisture: After microwaving, place the cauliflower in a cheesecloth or clean kitchen towel and squeeze out as much liquid as possible to prevent a soggy crust.
  • Mix the Dough: In a large mixing bowl, combine the drained cauliflower with mozzarella, beaten egg, Italian seasoning, salt, and pepper. Stir well until evenly mixed.
  • Shape the Crust: Line a baking sheet with parchment paper. Place the cauliflower mixture onto the sheet and press it into a circular shape, about 9 inches in diameter.
  • Bake the Crust: Place the crust in the oven and bake for 20 minutes until it firms up. Then, carefully flip it over and bake for another 5-10 minutes to ensure even crispness.
  • Add Toppings & Finish Baking: Remove from the oven, add your favorite keto-friendly toppings (cheese, meats, low-carb veggies), and bake for another 10 minutes until everything is melted and golden.
