  • Cooked rice preferably sushi rice, for serving

Instructions
 

  • Mix the Egg Batter: In a mixing bowl, whisk together the eggs, sugar, soy sauce, mirin, and salt until the mixture is smooth and uniform.
  • Cook the Omelet Base: Heat the sesame oil in a small nonstick skillet over medium-low heat. Pour in the egg mixture, letting it cook gently until the bottom is set and the top is still slightly soft. Swirl the pan slowly to move any uncooked egg from the center to the edges.
  • Finish Cooking the Omelet: Once the top of the omelet is nearly dry, slide it onto a plate. Place the plate over the skillet and flip it so the uncooked side of the omelet faces down. Cook for another minute, or until fully set. Alternatively, if your skillet is oven-safe, place it under the broiler for 20–30 seconds to finish cooking the top.
  • Shape and Slice the Omelet: Carefully transfer the cooked omelet to a plate and roll it into a tight cylinder while it’s still warm. Use a knife to slice the rolled omelet into even rings.
  • Prepare and Assemble the Dish: Mix the cooked edamame into the warm rice. Arrange the omelet rings on top of the rice. Add optional garnishes such as salmon roe for a burst of saltiness or Sriracha for a spicy kick. Drizzle with additional soy sauce if desired, and serve immediately.

  • For a more traditional tamago experience, consider using a tamagoyaki pan, though a regular skillet works well for this streamlined method.
