Ingredients
  

Rice Base:

  • 2 cups jasmine rice
  • 2 cups water

Cooking Additions:

  • 2 tablespoons sesame oil
  • 1 large white or yellow onion diced
  • 1 10-ounce box frozen peas and carrots mix
  • 1 10-ounce box frozen sweet corn
  • 1 tablespoon salted butter
  • 3 large eggs

Finishing Touches:

  • 3 tablespoons low-sodium soy sauce
  • Sesame seeds for garnish

Optional Hibachi Sauces

Japanese Mustard Sauce

  • ¼ cup soy sauce
  • ¼ cup milk
  • 2 tablespoons heavy cream
  • 2 tablespoons ground mustard powder
  • teaspoons sugar
  • 1 clove garlic minced

Japanese Ginger Sauce

  • ½ cup soy sauce
  • 2 tablespoons minced ginger
  • Juice of ½ lemon
  • 1 clove garlic minced
  • teaspoons onion powder
  • ½ teaspoon sugar
  • ¼ teaspoon white vinegar

Japanese Mayo Sauce

  • 1 cup mayonnaise
  • 2 tablespoons water
  • 1 tablespoon melted unsalted butter
  • 1 teaspoon tomato paste
  • 1 teaspoon sugar
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt

Instructions
 

  • Prepare the Rice: Rinse the jasmine rice in a strainer under running water until the water runs clear (about 90 seconds).
  • Cook the Rice: Add the rinsed rice and water to the Instant Pot, stir, and secure the lid. Set the valve to the sealing position, select Manual/Pressure Cook on High for 3 minutes. Once done, allow a 10-minute natural release, then perform a quick release. Fluff the rice and transfer it to a bowl.
  • Sauté Vegetables: Without cleaning the Instant Pot, hit Keep Warm/Cancel, add sesame oil, and switch to Sauté (More/High) mode. When the oil sizzles, scrape up any rice bits, then add the diced onion. Sauté for a minute before adding peas, carrots, and corn. Stir in butter and cook for 3 minutes.
  • Cook the Eggs: Push the vegetables to one side of the pot. Crack the eggs into the empty space, stirring constantly until scrambled and fully cooked. Once set, mix the eggs into the vegetables.
  • Combine Everything: Return the cooked rice to the pot, drizzle in the soy sauce, and sprinkle generously with sesame seeds. Stir everything together until well incorporated.
  • Serve & Enjoy: Serve warm with additional sesame seeds if desired.

Notes

  • For a smoky, restaurant-style finish, add a splash of toasted sesame oil at the end.
  • To make it a meal, add cooked shrimp, chicken, or steak after mixing in the rice.
  • For a spicier version, drizzle with sriracha or add chili flakes to the soy sauce.
