Hot Chocolate Cookies Dessert Recipe

Ingredients
  

For the Cookies:

  • ½ cup (1 stick) unsalted butter, at room temperature
  • 1 cup packed light brown sugar
  • 1 large egg at room temperature
  • 2 teaspoons vanilla extract
  • cups all-purpose flour
  • cup Dutch-processed cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

For the Topping:

  • 1 cup semisweet or bittersweet chocolate chips
  • 12 large marshmallows

Instructions
 

Prepare the Oven:

  • Preheat your oven to 350°F.
  • Line two baking sheets with parchment paper.

Make the Cookie Dough:

  • In a stand mixer fitted with the paddle attachment, beat the butter and brown sugar on medium-high speed for about 2 minutes, until light and fluffy.
  • Add the egg and vanilla extract. Continue beating for another 2 minutes until the mixture is smooth and pale in color.

Combine Dry Ingredients:

  • In a separate bowl, whisk together the all-purpose flour, Dutch-processed cocoa powder, baking soda, and salt.
  • Gradually add this dry mixture to the wet ingredients in the mixer. Beat on low speed until just combined. Avoid overmixing.

Portion the Dough:

  • Use a 1½-ounce cookie scoop (or about 3 tablespoons per cookie) to portion out the dough.
  • Roll the dough balls between your hands to smooth the edges and arrange them on the prepared baking sheets, leaving about 2 inches of space between each.

Bake the Cookies:

  • Bake for 10 to 12 minutes until the cookies are puffed up and set around the edges but still slightly soft in the center.
  • Remove from the oven and allow the cookies to cool on the baking sheets for about 15 minutes.

Prepare the Topping:

  • Switch your oven setting to broil (high).
  • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth.

Top the Cookies:

  • Spread about 2 teaspoons of melted chocolate on each cooled cookie, leaving a slight border.
  • Flatten each marshmallow between your palms and place one marshmallow on top of the chocolate on each cookie.

Broil the Marshmallows:

  • Place the cookie sheets, one at a time, under the broiler on the middle rack of the oven.
  • Broil for 1 to 2 minutes, watching closely, until the marshmallows are golden brown and slightly melted.

Cool and Serve:

  • Allow the cookies to cool slightly on the baking sheet before serving.

Notes

  • Ensure your butter is at room temperature for a smoother dough.
  • Monitor the marshmallows under the broiler, as they can toast very quickly.
  • For a darker chocolate flavor, you can use bittersweet chocolate chips instead of semisweet.
