Homemade Fisherman’s Stew One-Pot Recipe

This hearty one pot recipe features tender cod, shrimp, spicy chorizo, and potatoes in a richly flavored broth.
Perfectly suited for a slow cooker, this recipe offers a warm, savory meal with minimal effort and vibrant, fresh flavors.

Ingredients
  

  • 1 onion chopped
  • 8 ounces Spanish-style chorizo sausage cut into 1/4-inch pieces
  • 4 garlic cloves minced
  • 1 pound red potatoes unpeeled, cut into ½-inch pieces
  • 2 8-ounce bottles clam juice
  • 1 14.5-ounce can diced tomatoes, drained
  • 1/4 cup dry white wine
  • 1 1/2 pounds skinless cod fillets 1 to 1 1/2 inches thick, cut into 2- to 3-inch pieces
  • 8 ounces large shrimp 26 to 30 per pound, peeled, deveined, and tails removed
  • 1/4 teaspoon table salt
  • 1/4 teaspoon pepper
  • 2 tablespoons minced fresh parsley

Instructions
 

  • Microwave onion, chorizo, and garlic in a microwave-safe bowl, stirring occasionally, until the onion is softened (approximately 5 minutes). Transfer to the slow cooker.
  • Add potatoes, clam juice, tomatoes, and wine to the slow cooker. Stir to combine. Cover and cook on low for 5 to 7 hours or on high for 3 to 5 hours, until the potatoes are tender and the broth is richly flavored.
  • Season cod and shrimp with salt and pepper, then carefully nestle them into the stew. Cover and cook on high for an additional 30 minutes, until the shrimp are opaque throughout and the cod flakes easily when prodded with a knife.
  • Adjust the consistency with hot water as needed. Season the stew with additional salt and pepper to taste. Sprinkle with parsley and serve immediately.
