arils from 1 pomegranate
4fresh thyme sprigs or mint leaves

Instructions
In a large pitcher, combine the vodka, elderflower liquor, and clementine juice. Chill until ready to serve.
Just before serving, add ice, ginger beer, and pomegranate arils.
Serve garnished with thyme or mint.
Notes
Make-Ahead: The base (vodka, St. Germain, juice) can be mixed and chilled for up to 24 hours. Add the ginger beer right before serving to keep it fizzy.
Citrus Options: Freshly squeezed clementine, blood orange, or grapefruit juice all work wonderfully. Blood orange juice will create a beautiful, festive red color.
