High-Protein Three-Ingredient Flourless Pumpkin Brownies

These simple, high-protein brownies are made with just three ingredients and offer a rich, fudgy texture without added flour or sweeteners.
They are perfect for a wholesome, protein-packed dessert and can be easily customized with different nut butters or mashed fruits.

Ingredients
  

  • 1 cup pumpkin puree
  • ½ cup nut butter of choice
  • ¼ cup or more cocoa powder

Instructions
 

  • Preheat & Prepare: Set your oven to 350°F. Lightly grease an 8×4-inch loaf pan with cooking spray to prevent sticking.
  • Mix the Ingredients: In a high-speed blender or mixing bowl, combine the pumpkin puree, nut butter, and cocoa powder. Blend or mix thoroughly until the batter is smooth and thick.
  • Transfer & Bake: Pour the mixture into the prepared loaf pan and spread it evenly. Place the pan in the oven and bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out just slightly clean.
  • Cool & Serve: Let the brownies cool in the pan completely before slicing them into bars. This allows them to firm up for the best texture.

Notes

  • These brownies have a deep, dark chocolate taste without added sweetness. If you prefer a sweeter treat, consider topping them with frosting or a drizzle of honey.
  • For an extra fudgy texture, remove the brownies from the oven while the center is slightly underbaked; they will set as they cool.
  • The pumpkin puree can be substituted with mashed banana or sweet potato. Keep in mind that banana will add a stronger flavor.
