Ingredients
  

  • ¼ cup coconut flour can substitute with almond, peanut, or gluten-free oat flour
  • 1 scoop vanilla protein powder optional, about 32 to 34 grams
  • ¼ teaspoon sea salt
  • 2 tablespoons nut butter of choice
  • 1 tablespoon maple syrup
  • ¼ cup or more milk of choice (dairy-free if needed)
  • Chocolate chips, trail mix, or toppings of choice

Instructions
 

  • In a small bowl, combine the coconut flour, protein powder, and sea salt. Stir well to distribute the dry ingredients evenly.
  • In a microwave-safe bowl or small saucepan, gently heat the nut butter and maple syrup until softened and easy to mix. Stir until fully blended.
  • Pour the warm nut butter mixture into the dry ingredients and mix until the dough starts to form. It will be slightly crumbly at this stage.
  • Gradually add milk, one tablespoon at a time, stirring after each addition, until you achieve the desired cookie dough consistency.
  • Once mixed to your liking, enjoy immediately or refrigerate to allow the dough to firm up.
  • Top with chocolate chips, trail mix, or your favorite mix-ins before serving.

Notes

  • Depending on the flour or protein powder used, you may need additional milk to adjust the texture.
  • For a firmer consistency, refrigerate for a few hours before eating.
  • If using unsweetened protein powder or omitting it entirely, consider adding 1 to 2 tablespoons of a sweetener of choice.
  • Swap the maple syrup for a sugar-free alternative or use 1 tablespoon of granulated sugar-free sweetener.
