High-Protein Deconstructed S’mores French Toast

This high-protein dessert transforms classic French toast into a fun, deconstructed dish.
Warm, golden toast pieces are topped with gooey mini marshmallows, melty chocolate chips, and creamy yogurt or whipped coconut cream for a satisfying twist on s’mores.

Ingredients
  

  • 2 large egg whites
  • ¼ cup milk of choice dairy-free if needed
  • Cinnamon to taste
  • 1 tablespoon granulated sweetener of choice
  • 2 slices bread of choice
  • 1 to 2 tablespoons mini marshmallows or more
  • 1 to 2 tablespoons mini chocolate chips or more
  • Whipped coconut cream yogurt, cottage cheese, or dairy-free yogurt of choice
  • Crumbled graham crackers optional

Stovetop Instructions (12 min)

  • In a bowl, whisk together egg whites, milk, cinnamon, and sweetener. Soak both bread slices in the mixture, allowing each side to absorb the liquid evenly.
  • Lightly coat a frying pan with cooking spray and heat over medium. Once hot, add the soaked bread slices and cook for 3 to 4 minutes per side, flipping once until golden brown.
  • Transfer the cooked toast to a cutting board and slice it into small squares. Place the squares in a serving bowl.
  • Sprinkle mini marshmallows, chocolate chips, and optional graham cracker crumbles over the warm toast. Allow the marshmallows and chocolate to soften slightly.
  • Finish with a dollop of whipped coconut cream, yogurt, or cottage cheese. Enjoy!

Microwave Instructions (5 min)

  • Follow the stovetop steps to prepare the egg mixture and bread, but cut the bread into small squares before soaking.
  • Grease a microwave-safe mug or bowl and pour in the soaked bread pieces.
  • Microwave for 1 to 2 minutes, or until the egg mixture is fully cooked through.
  • Top with mini marshmallows and chocolate chips, allowing them to melt into the warm toast.
  • Finish with a sprinkle of graham cracker crumbles (if using) and a topping of yogurt or whipped coconut cream.

Notes

Vegan Option: Replace egg whites with ½ tablespoon of flax meal mixed with water. Let sit for 30 minutes before soaking the bread. Use dairy-free chocolate chips and vegan marshmallows.
Paleo-Friendly: Use slices of paleo bread but do not toast. Warm the bread lightly and top with dairy-free chocolate chips, coconut cream, and chopped nuts.
Sugar-Free Version: Opt for sugar-free marshmallows and chocolate chips. Note that sugar-free marshmallows may not melt as well.
Meal Prep Tip: French toast pieces can be made ahead of time and frozen. Simply reheat before adding toppings.
