Ingredients
  

  • ½ cup cashew butter
  • ¼ cup protein powder or substitute with peanut flour
  • 2 tablespoons maple syrup
  • 1 tablespoon or more milk of choice (dairy-free, if needed)

Instructions
 

  • Prepare the Pan: Line a mini loaf pan with parchment paper and lightly coat it with cooking spray.
  • Melt and Mix: In a microwave-safe bowl or small saucepan over low heat, gently melt the cashew butter. Stir in the protein powder until fully blended.
  • Add Sweetener: Pour in the maple syrup and mix well until everything is evenly combined. If the mixture appears too dry or crumbly, add the milk one tablespoon at a time, stirring until smooth.
  • Freeze: Spread the fudge mixture evenly into the prepared pan. Place it in the freezer for at least 30 minutes or until firm.
  • Slice and Store: Once set, remove the fudge from the pan, cut it into 8 pieces, and store them in the freezer. When ready to eat, let a piece thaw for about 5 minutes before enjoying.

Notes

  • If the protein powder makes the mixture gritty, add more milk gradually until the texture is smooth.
  • Keep the fudge stored in the freezer and thaw briefly before eating.
  • Add cocoa powder for a chocolate-flavored version.
  • Use sugar-free maple syrup for a lower-carb option.
