Healthy Spicy Roasted Cauliflower Steaks with Green Tahini

Prepare the Oven and Cauliflower: Preheat the oven to 450°F. Discard the outer leaves from the cauliflower heads and slice each head in half through the core. Cut each half into 1-inch thick slices to create cauliflower steaks. Place the steaks on a rimmed baking sheet.
Season the Steaks: Combine kosher salt, garlic powder, paprika, black pepper, and cayenne in a small bowl. Lightly coat both sides of the cauliflower steaks with olive oil using a brush, then evenly sprinkle the spice mix on both sides.
Roast the Cauliflower: Roast the cauliflower in the oven for 15 minutes. Carefully flip the steaks with a spatula, then return to the oven and roast for an additional 10–15 minutes, or until the cauliflower is golden and the stems are tender.
Make the Green Tahini Sauce: While the steaks are cooking, combine the tahini and fresh herbs in a food processor or blender. Blend until smooth, gradually adding water (1 tablespoon at a time) to reach a thinner, drizzle-friendly consistency.
Finish and Serve: Remove the cauliflower steaks from the oven and arrange them on a serving platter. Generously drizzle the green tahini sauce over the top and sprinkle with additional fresh herbs for garnish.
