Ingredients
  

  • ½ cup gluten-free old-fashioned rolled oats
  • ½ cup milk dairy or dairy-free
  • ¼ cup plain Greek yogurt dairy or dairy-free
  • 1 tablespoon chia seeds
  • 1 tablespoon pure maple syrup

Orange Pistachio Topping:

  • ¼ cup diced orange
  • 1 tablespoon roughly chopped pistachios
  • 1 tablespoon pure maple syrup
  • Pinch of ground ginger or cinnamon

Instructions
 

  • Prepare the Base: Combine oats, milk, yogurt, chia seeds, and maple syrup in a pint-sized mason jar or similar container. Stir thoroughly to mix the ingredients evenly.
  • Let It Rest: Cover the jar and place it in the refrigerator for at least 2 hours, but preferably overnight (about 8 hours) for the best texture.
  • Add the Topping: Before serving, layer the diced orange, chopped pistachios, an additional drizzle of maple syrup, and a sprinkle of ground ginger or cinnamon on top.

Notes

You can use quick-cooking oats as a substitute for rolled oats, but note that the texture will be softer and more porridge-like.
