Ingredients
  

  • 1 ½ pounds ground lamb
  • 1 large egg
  • ¼ cup finely chopped red onion
  • ¼ cup almond flour
  • 2 garlic cloves minced
  • ¼ cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh mint
  • 2 teaspoons dried oregano
  • ½ teaspoon ground cumin
  • 2 teaspoons lemon zest
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions
 

  • Prepare the Oven and Baking Sheet: Begin by preheating the oven to 400°F. Take a rimmed baking sheet and line it with parchment paper for easy cleanup.
  • Combine the Ingredients: In a large mixing bowl, add the ground lamb, egg, red onion, almond flour, minced garlic, parsley, mint, oregano, cumin, lemon zest, salt, and black pepper. Use your hands to mix the ingredients thoroughly until they’re well combined.
  • Shape the Meatballs: Scoop out about 1 ½ tablespoons of the mixture for each meatball (a medium cookie scoop can make this easier). Roll the mixture between your hands to form evenly sized meatballs. Arrange them on the prepared baking sheet, leaving a bit of space between each one.
  • Bake the Meatballs: Place the baking sheet into the preheated oven and bake for 25 to 30 minutes. The meatballs should be browned on the outside and fully cooked through.
  • Serve and Enjoy: Once cooked, serve the meatballs warm. They pair beautifully with a side of Tzatziki and a fresh salad of cucumbers, tomatoes, olives, and red onions, or use them as a topping for roasted vegetables.

Notes

Storage: Store any leftover meatballs in an airtight container in the fridge for up to 4 days. For longer storage, freeze them for up to 3 months.
Reheating Tips: To reheat frozen meatballs, let them thaw in the fridge overnight. Warm them in a 300°F oven for 10–15 minutes or heat in the microwave in 30-second intervals until fully warmed.
Recipe Variations: If you prefer not to use lamb, swap it out with ground beef or pork, or even use a combination of meats for a different flavor.
