Ingredients
  

  • 1 pound ground chicken
  • 1/3 cup finely diced yellow onion
  • 2 garlic cloves minced
  • 2 tablespoons pure maple syrup
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons finely chopped fresh tarragon
  • 2 tablespoons avocado oil or extra-virgin olive oil

Instructions
 

  • In a large bowl, combine the ground chicken, diced onion, minced garlic, maple syrup, salt, pepper, and tarragon. Use your hands to mix the ingredients thoroughly until well combined.
  • Divide the mixture into 8 equal portions and shape each into a small patty. Set them on a plate.
  • Heat the avocado oil or olive oil in a large skillet over medium-high heat. Once hot, cook the patties for 3–4 minutes per side until golden brown and cooked through. Transfer the patties to a paper towel-lined plate to drain any excess oil.

Notes

  • Storage: Keep the patties in an airtight container with parchment paper between them. They can be refrigerated for 4–5 days or frozen for up to 3 months.
  • Reheating: Reheat in a 350°F oven for 10–15 minutes (longer if frozen) or in the microwave for 1–3 minutes until heated through.
  • These patties pair wonderfully with scrambled eggs, sautéed vegetables, or as a filling for breakfast burritos. They can also complement sweet dishes like pancakes for a savory-sweet combo.
  • For a spicier twist, add a pinch of red pepper flakes or ground cayenne to the mixture. You can also substitute ground turkey for chicken if desired.
