  • 1 cup cassava flour
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 2 tablespoons extra-virgin olive oil
  • 2/3 cup warm water

  • Combine Dry Ingredients: In a large bowl, mix the cassava flour, cream of tartar, baking soda, and salt.
  • Incorporate Oil: Add the olive oil and use your hands to blend it into the dry mixture until the texture resembles coarse crumbs.
  • Knead Dough: Gradually add the warm water and knead for 2-3 minutes. Initially sticky, the dough will become smooth and pliable as it absorbs the water.
  • Divide and Shape: Split the dough into 6 equal portions. For uniform tortillas, flatten each piece using a tortilla press or by rolling between parchment paper into approximately 6-inch circles.
  • Cook Tortillas: Heat a dry skillet or griddle over medium-high heat. Place a tortilla on the hot surface and cook for about 1 minute until it bubbles and starts to brown. Flip and cook the other side for an additional minute. Repeat for all tortillas.

Notes

The dough should feel like soft Play-Doh; adjust with more water if too dry or more flour if too sticky. Using a high-quality cassava flour, such as Otto's, improves texture.
