  • 1 pound cremini or baby bell mushrooms stems trimmed
  • 1 tablespoon extra-virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons pure maple syrup
  • 3 garlic cloves minced
  • 1 teaspoon fresh thyme chopped
  • 1 teaspoon fresh parsley chopped (plus more for garnish)
  • 1/4 teaspoon kosher salt
  • Freshly ground black pepper to taste

Instructions
 

  • Heat the Oven: Preheat your oven to 425°F.
  • Combine Ingredients: Place the mushrooms in a large mixing bowl. Add the olive oil, balsamic vinegar, maple syrup, minced garlic, thyme, parsley, salt, and pepper. Mix gently to ensure the mushrooms are evenly coated.
  • Arrange for Roasting: Transfer the coated mushrooms to a rimmed baking sheet or a shallow casserole dish, spreading them out in a single layer. Pour any remaining marinade over the mushrooms.
  • Roast to Perfection: Place the mushrooms in the oven and roast for 20–25 minutes, stirring a few times during cooking to ensure even roasting. Once tender, remove them from the oven and garnish with additional parsley before serving.

Notes

Storage: Keep any leftovers in an airtight container in the fridge for 4–5 days or freeze for up to 3 months.
Reheating: For frozen mushrooms, thaw overnight in the refrigerator. Reheat in the microwave for 1–2 minutes or warm them on the stovetop in a skillet.
