Ingredients
  

  • 1 cup fresh ginger root peeled and sliced
  • 5 ½ cups water
  • 1 cup lime or lemon juice
  • 1 cup honey

Instructions
 

  • In a saucepan, bring water and ginger to a gentle simmer, allowing the flavors to infuse for about 5-10 minutes. Remove from heat and let it cool completely.
  • Once cooled, mix the honey and citrus juice into the ginger-infused liquid, stirring well to combine.
  • Strain the mixture through a fine sieve or cheesecloth into a pitcher, discarding any solid pieces. Refrigerate until chilled, then serve over ice.

  • Store in the refrigerator with a lid for up to 2-3 days.
  • For a cocktail version, add a splash of rum, bourbon, or vodka for an extra kick.
