Ingredients
  

  • ½ head cauliflower cut into bite-sized florets (about 2½ cups)
  • 3 tablespoons drained capers
  • ¼ cup plus 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon kosher salt plus more as needed
  • Freshly ground black pepper to taste
  • 2 medium garlic cloves grated or smashed into a paste
  • Finely grated zest of 1 lemon
  • 1 tablespoon unsalted butter
  • 3 tablespoons grated Parmigiano-Reggiano cheese optional
  • 8 ounces whole-wheat fusilli pasta
  • cup pine nuts toasted
  • Fresh lemon juice as needed

  • Replace cauliflower with Brussels sprouts or broccoli for a different flavor profile.

Instructions
 

  • Preheat the oven to 425°F.
  • In a large bowl, combine the cauliflower florets with 2 tablespoons of the capers, ¼ cup of olive oil, kosher salt, and black pepper. Toss to coat everything evenly, then spread the mixture on a large baking sheet. Roast in the oven, stirring occasionally, until the cauliflower turns golden brown and caramelized, about 25–30 minutes.
  • As the cauliflower cooks, finely mince the remaining tablespoon of capers. Combine the minced capers with the garlic, lemon zest, butter, the last tablespoon of olive oil, and the cheese (if using) in a large serving bowl. Set this aside.
  • Bring a pot of salted water to a boil and cook the fusilli until it’s al dente. Drain the pasta, reserving a little of the pasta water in case you need it to adjust the sauce later.
  • Once the cauliflower is roasted, add it to the serving bowl with the caper-garlic mixture. Toss in the cooked pasta and pine nuts, then squeeze some fresh lemon juice over the dish. Mix everything thoroughly, adjusting the seasoning with more salt, pepper, or lemon juice as needed.
  • Serve immediately and enjoy this hearty, flavorful dish!

Notes

  • For added texture, you can sprinkle toasted breadcrumbs over the finished dish.
  • Adjust the lemon juice and capers to balance acidity to your preference.
