Ingredients
  

  • ¼ cup pork panko
  • 5 large eggs
  • 1 tablespoon bacon grease or other cooking fat of choice
  • Pinch of kosher salt for garnish

Instructions
 

  • Put the pork panko into a medium-sized bowl.
  • Separate the yolks from the whites gently. Take care not to break the yolks. Set the yolks aside on the panko.
  • Carefully roll each yolk in the panko to ensure an even coating. Handle gently to avoid cracking the yolks.
  • Heat a medium skillet over medium-high heat and add the bacon grease or preferred fat. Swirl to coat the pan evenly.
  • Fry the panko-coated yolks for about 2 minutes on each side for firmer yolks. For runnier yolks, reduce the cooking time to 1 minute per side. They should feel slightly squishy if you’re aiming for a softer texture.
  • Sprinkle with kosher salt and serve immediately while still warm.
