Instructions
Put the pork panko into a medium-sized bowl.
Separate the yolks from the whites gently. Take care not to break the yolks. Set the yolks aside on the panko.
Carefully roll each yolk in the panko to ensure an even coating. Handle gently to avoid cracking the yolks.
Heat a medium skillet over medium-high heat and add the bacon grease or preferred fat. Swirl to coat the pan evenly.
Fry the panko-coated yolks for about 2 minutes on each side for firmer yolks. For runnier yolks, reduce the cooking time to 1 minute per side. They should feel slightly squishy if you’re aiming for a softer texture.
Sprinkle with kosher salt and serve immediately while still warm.
