Ingredients
  

  • 4 slices bacon cut into smaller pieces
  • ½ cup onion chopped
  • 1 cup chicken broth
  • 1 head cabbage cored and cut into 2 inch pieces
  • salt and black pepper to taste

Instructions
 

  • Heat a stock pot or Dutch oven over medium heat. Add the chopped bacon and onion to the pot and cook, stirring occasionally, until the bacon is crispy and the onions are soft and translucent.
  • Pour the chicken broth once the bacon is cooked and the onions are tender. Using a wooden spoon or spatula, scrape the bottom of the pot to release any flavorful bits that may have stuck during cooking.
  • Add the chopped cabbage to the pot, stirring to combine it with the bacon, onions, and broth. Season the mixture with salt and black pepper to your desired taste. (If you enjoy a tangy flavor in your cabbage, you can optionally add a splash of vinegar at this point.)
  • Place the lid on the pot and reduce the heat to medium-low. Allow the cabbage to simmer for 10-15 minutes or until it reaches your preferred level of tenderness and the vegetables mostly absorb the broth. Stir the contents of the pot occasionally to ensure even cooking and prevent sticking.
  • Remove the pot from the heat once the cabbage is tender and the flavors have melded together. Taste and adjust the seasoning if needed.
