Equipment

  • Baking sheet or pizza stone

Ingredients

  • 2 tablespoons extra-virgin olive oil plus more for greasing and drizzling
  • ½ pound no-knead bread and pizza dough or store-bought pizza dough
  • 1 tablespoon chopped fresh chives
  • ¼ cup lightly packed fresh basil leaves chopped (plus more for garnish)
  • 1 garlic clove grated
  • ½ to 1 teaspoon crushed red pepper flakes
  • 3 ounces crumbled blue cheese
  • 1 cup shredded mozzarella or fontina cheese
  • ½ cup grated Parmesan cheese
  • 1 nectarine or peach thinly sliced
  • Kosher salt and freshly ground pepper to taste
  • 6 blackberries optional
  • Balsamic vinegar for drizzling
  • Honey for drizzling

Instructions

  • Preheat the Oven: Begin by setting your oven to 450°F (230°C). Lightly grease a baking sheet or prepare a pizza stone for baking.
  • Roll Out the Dough: On a floured surface, stretch or roll the pizza dough into a thin circle or rectangle, about ¼ inch thick. Gently move the dough to the prepared baking sheet or stone.
  • Add the Base Layer: Spread 2 tablespoons of olive oil evenly over the surface of the dough, leaving a border of about 1 inch around the edges for the crust.
  • Layer the Flavorings: Sprinkle the dough with chopped chives, basil, grated garlic, and a pinch of crushed red pepper flakes for some heat.
  • Top with Cheeses and Nectarines: Evenly distribute the crumbled blue cheese, shredded mozzarella, and grated Parmesan over the pizza. Arrange the thin slices of nectarine across the top for a beautiful, fruity touch. Drizzle lightly with more olive oil and season with a bit of salt and pepper.
  • Bake the Pizza: Place the pizza in the oven and bake for 10 to 15 minutes, or until the crust is golden and crisp and the cheese is bubbling and melted.
  • Garnish and Serve: Once the pizza is done, remove it from the oven and sprinkle fresh basil on top. If desired, add a handful of blackberries for extra color and flavor. Drizzle with balsamic vinegar and a little honey for a sweet and tangy finish. Slice into portions and serve immediately.

Notes

Cheese Substitutions: Swap crumbled goat cheese or feta for blue cheese if you prefer milder flavors.
Fruit Options: Peaches can replace nectarines for a similar sweet-tangy flavor.
Optional Additions: Blackberries provide a unique, juicy burst—feel free to skip them if you prefer a simpler recipe.
Serving Tip: This pizza pairs wonderfully with a crisp white wine or a light, fruity rosé.
