For the Honey-Roasted Grapes:

  • 2 cups red grapes halved if large
  • ¼ cup honey
  • 1 tablespoon salted butter
  • Flaky sea salt

For the Toast:

  • 6 slices rustic or whole-grain bread toasted
  • 1 cup whole-milk ricotta cheese
  • White balsamic or balsamic vinegar for drizzling (optional)
  • 2 tablespoons fresh thyme leaves for garnish

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Prepare the roasted grapes: In a 9 × 13-inch baking dish, combine the grapes, honey, butter, and a pinch of flaky sea salt. Bake until the grapes begin to blister and release their juices, about 15–20 minutes. Remove from the oven and let cool slightly.
  • Assemble the toast: Spread each slice of toasted bread with ricotta, dividing it evenly among the slices. Top with the roasted grapes, a drizzle of balsamic vinegar (if desired), fresh thyme leaves, and a final sprinkle of flaky sea salt.
