Ingredients
  

  • 2 acorn squashes halved lengthwise and seeds removed
  • 3 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • Kosher salt to taste
  • 4 tablespoons salted butter

Instructions
 

  • Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper.
  • Place the squash cut side down on the prepared baking sheet. Roast until fork-tender, about 15 minutes.
  • Remove the baking sheet from the oven and carefully flip each squash half over. Drizzle the maple syrup evenly over each half and sprinkle with ground cinnamon and a pinch of kosher salt. Add 1 tablespoon of butter to the center of each squash half.
  • Return the baking sheet to the oven and roast until the edges are caramelized and brown, about 30 minutes.
  • Remove from the oven and gently swirl the melted butter and syrup around each squash to coat evenly. Serve warm as a side dish or enjoy on its own.

Notes

  • For a vegan variation, substitute the butter with vegan margarine or coconut oil.
  • Pair this dish with roasted chicken or turkey for a complete meal.
  • Leftovers can be reheated in the oven at 350°F for 10-15 minutes.
