Easy High-Protein Zucchini Noodles with Fried Egg & Parmesan

Ingredients
  

  • 2 medium zucchinis spiralized into noodles
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 garlic clove minced
  • 1 tbsp fresh parsley chopped (optional)
  • Sea salt and black pepper to taste

Instructions
 

  • Warm the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about a minute or two until fragrant.
  • Toss in the zucchini noodles and cook, stirring occasionally, for 3-4 minutes until slightly tender. Season with salt and black pepper.
  • Meanwhile, heat another pan and fry the eggs to your preferred doneness, whether sunny-side up or over-easy.
  • Evenly divide the zucchini noodles onto two plates, placing a fried egg on each. Sprinkle Parmesan cheese over the top.
  • Optionally, garnish with fresh parsley before serving immediately.

Notes

  • Add chili flakes for a spicy kick.
  • Toss in cherry tomatoes for extra color and freshness.
