Easy High-Protein Turkey & Spinach Stuffed Bell Peppers

Ingredients
  

  • 4 large bell peppers halved and seeds removed
  • 1 lb ground turkey
  • 1 cup fresh spinach chopped
  • ½ cup tomato sauce low sugar
  • ½ cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F.
  • In a large skillet over medium heat, warm the olive oil, then add the ground turkey. Cook, stirring occasionally, until the turkey is evenly browned.
  • Mix in the chopped spinach, tomato sauce, Italian seasoning, salt, and pepper, cooking for another 3-4 minutes until the spinach wilts and the mixture is well combined.
  • Place the bell pepper halves on a lined baking sheet and evenly distribute the turkey filling inside each one.
  • Sprinkle shredded mozzarella over the top of the stuffed peppers.
  • Transfer the baking sheet to the oven and bake for 25-30 minutes or until the bell peppers are tender and the cheese is melted and bubbly.
  • Remove from the oven and let them rest for a couple of minutes before serving.

Notes

Extra Vegetables: Add diced mushrooms or zucchini to the turkey filling for more texture and nutrients.
Cheese Alternative: Swap mozzarella for cheddar or feta for a different flavor profile.
Make It Spicy: Mix in red pepper flakes or chopped jalapeños for extra heat.
