Easy High-Protein Turkey & Spinach Stuffed Bell Peppers
This easy, high-protein recipe features tender bell peppers filled with a flavorful mix of lean ground turkey, fresh spinach, and melted mozzarella. It's a satisfying, nutritious meal that's simple to prepare and packed with protein for a healthy dinner option.
In a large skillet over medium heat, warm the olive oil, then add the ground turkey. Cook, stirring occasionally, until the turkey is evenly browned.
Mix in the chopped spinach, tomato sauce, Italian seasoning, salt, and pepper, cooking for another 3-4 minutes until the spinach wilts and the mixture is well combined.
Place the bell pepper halves on a lined baking sheet and evenly distribute the turkey filling inside each one.
Sprinkle shredded mozzarella over the top of the stuffed peppers.
Transfer the baking sheet to the oven and bake for 25-30 minutes or until the bell peppers are tender and the cheese is melted and bubbly.
Remove from the oven and let them rest for a couple of minutes before serving.
