Easy High-Protein Shepherd’s Pie with Cauliflower Topping

This easy, high-protein shepherd’s pie is a healthier twist on the classic dish, using a creamy cauliflower mash instead of potatoes.
With lean ground beef and nutritious vegetables, it's a satisfying low-carb meal packed with flavor.

Ingredients
  

Meat & Vegetables:

  • 1 lb ground beef grass-fed, lean
  • 1 cup onion diced
  • 1 cup carrots diced
  • 1 cup celery diced

Cauliflower Topping:

  • 2 cups cauliflower florets
  • 1/4 cup heavy cream
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F and set aside a baking dish.
  • Prepare the cauliflower mash by boiling the cauliflower florets in salted water for about 10 minutes until soft. Drain and blend them with heavy cream, butter, garlic powder, salt, and pepper until smooth and creamy.
  • Cook the beef and vegetables by browning the ground beef in a skillet over medium heat. Once the meat is cooked through, add the diced onion, carrots, and celery. Stir occasionally and cook until the vegetables are softened. Season the mixture with paprika, salt, and pepper.
  • Assemble the shepherd’s pie by transferring the cooked beef and vegetable mixture to a baking dish. Spread the cauliflower mash evenly over the top.
  • Bake for 20 minutes or until the top is golden brown. Let cool slightly before serving.

Notes

For extra richness, stir in a handful of grated Parmesan into the cauliflower mash before spreading it on top.
