Ingredients
  

For the Pork Chops:

  • 2 bone-in pork chops about 6 oz each
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Sea salt and black pepper to taste

For the Cauliflower Purée:

  • 2 cups cauliflower florets
  • ¼ cup heavy cream
  • 1 tbsp butter
  • Sea salt and black pepper to taste

Instructions
 

  • Heat the Pan: Place a skillet over medium heat and pour in the olive oil.
  • Season the Pork: Coat the pork chops evenly with rosemary, thyme, garlic powder, salt, and black pepper.
  • Cook the Pork Chops: Sear the pork for about 3-4 minutes on each side until a golden crust forms. Lower the heat and continue cooking for another 5 minutes, or until the internal temperature reaches 145°F. Transfer the pork to a plate and let it rest.
  • Prepare the Cauliflower Purée: Steam the cauliflower florets until fork-tender. Blend with heavy cream, butter, salt, and black pepper until smooth.
  • Assemble the Dish: Spoon the cauliflower purée onto plates and top with the pork chops. Serve immediately.

Notes

  • Sprinkle fresh parsley or grated Parmesan into the cauliflower purée for extra flavor.
  • Swap heavy cream with Greek yogurt for a lighter alternative.
