Lamb Chops:

  • 1 tsp dried rosemary

Spinach Salad:

  • 4 cups fresh spinach
  • 1/2 small red onion thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tbsp balsamic vinegar
  • Drizzle of olive oil

Instructions
 

  • Marinate the lamb chops: Coat the lamb chops evenly with olive oil, minced garlic, dried rosemary, salt, and pepper. Let them sit for 10 minutes to absorb the flavors.
  • Grill the lamb chops: Preheat a grill or a grill pan over medium-high heat. Once hot, cook the lamb chops for about 3-4 minutes per side for a medium-rare finish. For a different level of doneness, adjust the cooking time accordingly.
  • Prepare the spinach salad: In a large mixing bowl, combine fresh spinach, sliced red onion, and crumbled feta cheese. Drizzle with balsamic vinegar and a bit of olive oil, then toss to coat.
  • Serve: Arrange the grilled lamb chops on a plate alongside the spinach salad.

Notes

For extra texture and flavor, toss in sliced avocado or roasted walnuts into the salad. These additions enhance the dish with healthy fats and a delicious crunch!
