Ingredients
  

  • 2 cups cauliflower rice
  • 1 chicken breast diced and cooked
  • 1/2 cup mixed vegetables carrots, peas, optional
  • 2 large eggs beaten
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 tsp grated ginger
  • 2 green onions sliced

Instructions
 

  • Warm sesame oil in a large skillet over medium heat.
  • Add the minced garlic and grated ginger, stirring constantly for about a minute until fragrant.
  • Toss in the cauliflower rice and mixed vegetables, allowing them to cook and soften for about 5 minutes while stirring occasionally.
  • Move the mixture to one side of the skillet and pour the beaten eggs into the empty side, scrambling them until fully cooked.
  • Mix in the diced chicken and drizzle with soy sauce, stirring well to combine all ingredients.
  • Garnish with sliced green onions and serve immediately while hot.

Notes

  • Sprinkle sesame seeds for extra texture and nutty flavor.
  • Drizzle sriracha or add chili flakes for a spicy kick.
