Ingredients
  

  • 6 large eggs
  • 1 cup bell peppers diced (red, yellow, or green)
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/4 cup chopped fresh parsley or chives
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or cooking spray for greasing

Instructions
 

  • Preheat the oven to 375°F and lightly grease a muffin tin with olive oil or cooking spray.
  • In a bowl, whisk the eggs together with salt and black pepper until the mixture is smooth.
  • Stir in the diced bell peppers, shredded cheese, and chopped herbs, mixing well to distribute the ingredients evenly.
  • Pour the egg mixture into the prepared muffin tin, filling each cup about three-quarters full.
  • Bake for 18-20 minutes or until the frittatas are set and the tops appear slightly golden.
  • Let them cool briefly before removing them from the tin. Serve warm or store for later.

  • Enhance the flavor by adding cooked bacon or diced mushrooms.
