Ingredients
  

  • 1 lb beef sirloin thinly sliced
  • 1 tbsp olive oil
  • 1 small onion chopped
  • 2 cups mushrooms sliced
  • 1 cup unsweetened almond milk
  • 1/4 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 4 cups cauliflower rice steamed
  • Sea salt and black pepper to taste

Instructions
 

  • Warm olive oil in a large skillet over medium heat. Add the beef and cook until it’s browned, stirring occasionally. Remove from the pan and set aside.
  • In the same skillet, add the chopped onion and sliced mushrooms. Sauté for a few minutes until softened and fragrant.
  • Pour in the almond milk, then mix in the sour cream, Dijon mustard, paprika, salt, and pepper. Stir everything well and allow the mixture to simmer for about 5 minutes.
  • Return the cooked beef to the skillet and continue cooking for another 5 minutes, ensuring the meat is heated through and infused with the sauce.
  • Spoon the stroganoff over the steamed cauliflower rice and serve immediately.

  • Swap beef for chicken for a leaner protein option.
