Easy High-Protein Beef Stroganoff over Cauliflower Rice
This easy high-protein beef stroganoff is a flavorful and satisfying dish served over cauliflower rice for a lighter alternative to traditional pasta. Tender beef sirloin is cooked in a creamy, savory sauce with mushrooms, onions, and a hint of Dijon mustard, making it a delicious and nutritious meal.
Warm olive oil in a large skillet over medium heat. Add the beef and cook until it’s browned, stirring occasionally. Remove from the pan and set aside.
In the same skillet, add the chopped onion and sliced mushrooms. Sauté for a few minutes until softened and fragrant.
Pour in the almond milk, then mix in the sour cream, Dijon mustard, paprika, salt, and pepper. Stir everything well and allow the mixture to simmer for about 5 minutes.
Return the cooked beef to the skillet and continue cooking for another 5 minutes, ensuring the meat is heated through and infused with the sauce.
Spoon the stroganoff over the steamed cauliflower rice and serve immediately.
