  • 4 chicken thighs bone-in, skin-on
  • 2 cups Brussels sprouts halved
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Sea salt and black pepper to taste

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Season the Brussels sprouts: In a mixing bowl, toss the halved Brussels sprouts with 1 tablespoon of olive oil, half of the minced garlic, salt, and pepper. Spread them evenly on the prepared baking sheet.
  • Prepare the chicken: Pat the chicken thighs dry with a paper towel. Rub them with the remaining olive oil, the rest of the minced garlic, paprika, thyme, salt, and pepper, ensuring they are evenly coated.
  • Arrange and bake: Place the seasoned chicken thighs on the baking sheet, positioning them between the Brussels sprouts.
  • Cook in the oven for about 30 minutes or until the chicken skin becomes crispy and golden brown, and the internal temperature reaches 165°F.
  • Serve and enjoy: Plate the chicken thighs alongside the roasted Brussels sprouts while hot.
