For the Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon minced or grated garlic
  • 1 tablespoon finely chopped dill or parsley leaves

  • 1 tablespoon freshly squeezed lemon juice

For the Tomato Salad:

  • 3 large heirloom tomatoes sliced into ¼-inch rings
  • 3 balls of burrata cheese 8 ounces total, see variations below
  • 1 tablespoon chopped fresh chives
  • Extra-virgin olive oil for finishing
  • Fine sea salt and freshly ground black pepper to taste

Variations:

  • Cheese Options: Substitute burrata with fresh mozzarella torn into bite-sized pieces or mozzarella pearls.
  • Tomato Mix: Add halved cherry tomatoes for additional color and sweetness if heirloom tomatoes are unavailable.

Instructions
 

  • Make the Dressing: Combine the olive oil, garlic, dill or parsley, lemon zest, and lemon juice in a small bowl. Whisk until thoroughly blended, then set it aside for later.
  • Prepare the Salad: On a large serving platter, arrange the tomato slices so that they slightly overlap one another. Break the burrata into small, bite-sized portions and scatter them over the tomatoes. Drizzle the prepared dressing evenly over the salad, ensuring all components are lightly coated.
  • Add Final Touches: Sprinkle the chopped chives over the salad, then drizzle a bit more olive oil over the top for added richness. Season generously with fine sea salt and freshly ground black pepper right before serving to keep the flavors vibrant. Serve immediately for the best taste and texture.

Notes

  • Opt for garden-fresh heirloom tomatoes during their peak season to achieve the best flavor. If unavailable, high-quality tomatoes or cherry tomatoes can be substituted.
  • Add salt and pepper only at the last moment to prevent the tomatoes from becoming overly soft or watery.
